Gino Sorbillo arrives in Japan for the first time
Coredo Muromachi Terrace opened on September 27th, 2019, and as I was wandering around wondering what it was like, I came across a delicious-looking pizza restaurant on the first floor.
There was a long line as this was the first Japanese store of Gino Sorbillo, a long-established pizzeria founded in Naples in 1935.
I only scouted the place that day, and tried it for lunch later.
They open at 11:00, so I headed there aiming to get in after 11:30.
Since it was a weekday, there were only one or two groups of customers ahead of me.
I didn’t have to wait too long to get in.
There was a menu that doubled as a lunch mat on the table, and the basic menu consisted almost entirely of pizza.
There were also some appetizers like Caprese, as well as desserts like tiramisu and wine.
The menu had information about the background of Gino Sorbillo, the man who started the pizzeria.
Apparently, the chef has 19 siblings, all of whom are pizza chefs!
It said that he was the 19th of 20 siblings, and all of his siblings were pizza chefs.
I remember thinking that was amazing, all of them were pizza chefs.
It seems that they have branches in Naples, Milan, New York, Rome, and other places besides Japan.
This is their first store in Japan, but it may also be their first in Asia.
We ordered the Italian salad and Margherita Bufala.
The Italian salad was a hearty salad containing tomatoes, tuna, sun-dried tomatoes, olives, and sweet corn, and was just the right size for two people to share.
I was debating whether to get a regular Margherita pizza or one with buffalo mozzarella, but since I was there anyway, I ordered the Margherita Bufala, which had delicious looking buffalo mozzarella.
They also had a regular mozzarella margherita, but when I read the description on the menu, I found that the buffalo mozzarella had a richer cheese flavor, so I decided to try that one.
The finished pizza was quite large.
It contained tomato sauce, buffalo mozzarella, Parmesan, olive oil, and basil.
We ordered one pizza for two people, but it was just the right amount to share with the salad.
We immediately cut the baked pizza into four and ate one half each.
When we transferred the pizza to a plate, the juicy moisture from the tomatoes oozed out.
We folded each of the four pizzas in half and put it in our mouths.
The not-too-strong, refined acidity of the tomatoes and the saltiness of the buffalo mozzarella spread in our mouths.
The pizza dough was not too thick, and had just the right amount of chewy texture, which went perfectly with the tomato sauce and mozzarella!
When we took a bite of the pizza, the dough was moist and chewy, and the not-too-strong acidity of the tomatoes was delicious!
I ate some delicious pizza for the first time in a while, thinking to myself, “Ah, I really love tomato sauce that brings out the flavor of the tomato.”
Margherita pizza is the best after all.
The bill for two people was about 4,000 yen (I think).

It was very delicious.
I would definitely like to visit this restaurant again when I visit Nihonbashi, and I highly recommend it.
